The folks at Alex's mv mailing list helped compile a rather-comprehensive list (after the jump) of all one-take videos ever made, including faux one-takers like the Spice Girls' "Wannabe". Can you think of any others?

there was an italian one-shot video which was shot in two versions for the original band (le vibrazioni "dedicato a te"; the SAME video was then shot (same director and location, with only slight changes in the characters) for two other artists (frankie hi nrg, and then also elio & le storie tese). i'll try to find links.
Hmmm...I believe that the Stereo MCs had a one-shot or pseudo one-shot with their "Deep Down & Dirty" video.

everybody thought she fell off the face of the planet after Mother Mother, but she never stopped working. and in June she released a new album, Blink the Brightest, a great collection of songs she's been working on for a while, and it's one of the best albums of 2005.
